A Novel Approach to Optimize the Industrial Process of Membrane Concentration of Grape Musts

Nanofiltration and reverse osmosis are used in the concentration of grape musts winemaking. Both technologies offer an effective way to concentrate musts, reducing volume solids content achieve desired characteristics final wine. The choice between nanofiltration depends on specific needs winemaker characteristics. It is important carefully consider properties performance selected membranes optimize process ensure outcome. Herein, we present a novel approach that allows us choose suitable membrane for optimal industrial both nanofiltration. proposed method consists combining fitting equations laboratory results with balance plant. Specifically, full-scale plant has been designed assembled which Trebbiano, Verdeca, Black Bombino, White Bombino varieties have concentrated through best-performing membranes. Results show sugar commercially appreciated when work at high pressure can be obtained.
